It helps in reducing viscosity and increases filtration rate by hydrolyzing protein gels.

It rapidly hydrolyses Glucan based Non-Starch Polysaccharides (NSP’s) for maximum extraction and viscosity reduction during mashing.

ECOENZYME-MALT

It helps in hydrolysis of adjuncts, containing Non-Starch Polysaccharides (NSP’s) and proteins. This results in a fall of viscosity and better filtration rate.

It is used to avoid formation of Diacetyl from Alpha-Acetolactate during fermentation, which imparts an unpleasant taste to beer.
